We began salt curing egg yolks this year mostly to use as a post oven pizza topping, but it wasn't until we had a slice of Rick Easton's pizza with bottarga on it that it really clicked what we were going for. The richness of umami and brine in this bottarga is just bonkers. Do yourself a favor and put some on avocado toast.

I ate so much Edward's Surryano Ham in 2015 that I forced Molly to stop at their smokehouse last winter to buy an 8lb Surryano ham direct from the source. It was an absolute shock to hear about the massive fire that broke out in February, but luckily we made it through the rest of the year with that Surryano. It looks like they'll be out of stock until July 2017, since it takes so long to cure, but why not get some Country Bacon to support them in the time being?
